Italian Meatballs

1 Lb ground beef
2 eggs
3 slices of bread, dried, crumbled, soaked
1 Tbsp basil
2 Tbsp parsley, finely chopped
1 Tbsp garlic salt or chopped fresh garlic
1 Tbsp onion salt
pinch ground black pepper
1/2 cup Parmesan cheese



Mix ingredients together. Make into bite size balls. Fry until thoroughly cooked (no pink is noticed inside). These meatballs can be used as an hors d’oeurve or added into a tomato sauce with Italian spices.

Cajun Beef & Cabbage

1 pound ground beef
1 medium green pepper -- chopped
1 medium onion -- chopped
2 garlic cloves -- minced
1 can diced tomatoes and green chilies (10 oz)
1 can tomato sauce (8 oz)
1/2 cup uncooked long grain rice
1 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 tsp white, black & cayenne pepper- or to taste
4 drops hot pepper sauce -- or to taste
1 small head cabbage -- chopped
1 cup shredded cheddar cheese (4-oz)

In a skillet, cook the beef, green pepper, onion and garlic until meat is no longer pink; drain.

Stir in the tomatoes, tomato sauce, rice and seasonings.
Spread into an ungreased 13 x 9 x 2-inch baking dish.
Top with the cabbage and cheese.

Cover and bake at 350 degrees for 65 to 75 minutes or until the rice is tender.

Enchilada bake

1 pound ground beef
1/4 cup onion -- chopped
1 clove garlic -- minced
1 can tomato sauce (8 ounce)
1/4 cup water
chili powder (1 to 2 teaspoons)
1/2 teaspoon salt
1/4 teaspoon pepper
4 corn tortilla (6 inch)
2 cups shredded cheddar cheese (8-oz)


In an ungreased 2 quart microwave-safe dish, combine the beef, onion and
garlic. Cover and cook on high for 5 minutes or until meat is no longer
pink, stirring once; drain. stir in tomato sauce, water,chili powder,
salt and pepper. Cover and cook on high for 8 minutes, stirring once.

In an ungreased 1-1/2 quart round dish, layer one tortilla, 1/2 cup meat
sauce and 1/2 cup cheese. Repeat layers three times. Heat, uncovered, on
high for 1 minute or until the cheese is melted.

Yield 4 servings.

Sarmale (cabbage rolls)

1 kg minced meat (half pork and half beef)
2 brine cabbages
75 g rice
2 medium onions
400 g tomato (1 can) or 2 tbsp of tomato sauce
salt
pepper
dill
savory at taste

Shred the onion. Mix the meat with the rice and onion. Add salt, pepper, dill and savory at taste. Choose fine cabbage leaves. Cut fine the very small ones. Make oval meatballs out of meat and cloth them in cabbage leaves as babies in diapers.

In a pot, put the cut cabbage and arrange the sarmale around the pot. Finish with cut cabbage again. Add water to cover the sarmale and let boil at small fie until the cabbage is ready.

Serve with sour cream on 2 or 3 sarmale per serving and with corn mush. This dish can also be made with fresh cabbage, but in this case, between the sarmale layers, put layers of sliced tomatoes. These, too, are served with sour cream and Mamaliga (corn mush).

Porcupine Meatballs

1 lb. Ground Beef
1/2 cup Instant rice
1/2 cup water and 1 cup of water
1/3 cup chopped onion
1 tsp. salt
1/2 tsp. celery salt
1/8 tsp. pepper
1/8 tsp. garlic powder
1 (15 oz.) tomato sauce
2 T. Worchestershire sauce

Heat oven 350 degrees

Directions:

Mix meat, rice, 1/2 cup water, onion and spices all together.

Form into small meatballs and place into 8x8x2 baking dish.

Mix tomato sauce, 1 cup water and worchestershire sauce.

Pour on top of meatballs. Cover with foil.

Bake for 45 minutes.

Uncover and stir sauce and spoon over meatballs......bake for additional 15 minutes or until rice is tender!

Ground Beef - Lettuce Sushi

From the kitchen of a friend

Brown with 1/2 cup water
1/4 Lb ground beef
1 tsp sugar
1 tbsp soy sauce
1 tbsp green onion (finely chopped)
1/2 tsp garlic (finely chopped)
1 tsp ground sesame seed
Dash of black or white ground pepper
1/2 tbsp sesame oil

Add to above mixture and cook thoroughly with 1/2 cup water
2-3 tbsp miso (white fermented bean paste) (optional)
1/2 onion (finely chopped)
1 clove garlic (finely chopped)
1 green pepper (finely diced)
1 1/2 tbsp sugar

Remove from flame and add
1 tbsp sesame oil
2 tbsp ground sesame seed
1 red chili pepper (ground)

Cool mixture to room temperature.

Roll in leafy lettuce and serve.

Note: this makes a light dinner meal...
